– 250 g de poudre d’amande émondée.
– 450 g de sucre glace.
– 40 g de poudre de cacao.
– 07 blanc d’oeufs.
– 01 càcde jus de citron ( pour faire monter les blancs en neige il y a ceux qui mettent un peu de sel ou de bicarbonate, mais cela reste facultatif, à chacun son astuce)
– 25 g de sucre glace ( pour les blancs d’oeufs)
– pour la crème ganache : 250g de crème fraiche 35% + 200g de chocolat + 35 g de beurre
